The cocoa factsheet: Production & processing
Cocoa was used for human consumption as early as 1000 BC. The origin of this probably lies in Central America. Cocoa beans are the seeds of the cocoa fruit. The yellowish, oval fruit grows at temperatures of around 30 °C on the cocoa tree - more precisely, on the trunk of the tree. When harvested, the fruit is taken from the tree with machetes and sickle sticks, then opened and stored for fermentation. This is necessary to ensure the desired flavour. The white beans also change their colour to brown here. During the fermentation process, it gets quite warm between the beans and the moist cocoa beans must then be placed in the sun again to dry. After drying - which can take several weeks - the beans are roasted. Then the beans are either sent to us at KoRo or perhaps to Charlie's chocolate factory, where the cocoa beans are crushed and ground. The grinding generates heat, the cocoa butter melts and the final cocoa mass can be processed into chocolate or cocoa powder. So you see, a lot has to happen before you can enjoy your hot cocoa or chocolate bar!
What can I do with whole cocoa beans?
Even the Aztecs knew that cocoa was the food of the gods and goddesses. It is not only the taste that is divine, but also the variety of uses. You can do more than just snack on our cocoa beans straight from the bag. We admit that the tart taste takes a little getting used to, but it can soothe your sweet tooth quite well. You can also eat sweet fruit with it or simply garnish your muesli with some cocoa. Have you ever made your own cocoa drink? Roast the beans in a pan and then separate the shell. Then just grind the beans and mix with a spoonful of sugar or spices of your choice to taste. Then pour in hot water, hot milk (or oat drink for the vegan version) and the delicious chocolate drink is ready. It's not only good for breakfast, but also tastes great before bedtime. Later, from 19th century onwards, cocoa began to be cultivated intensively, so as to allow the whole world to enjoy its unique taste in many different variations. Ivory Coast is the world's leading cocoa producer, followed by Ghana, Indonesia, Nigeria, Cameroon, Brazil and other countries. More than 5 million tons of cocoa are harvested each year worldwide. Wahr oder falsch? Naja, fangen wir von vorne an: Ohne Kakaobohne, kein Kakao und folglich auch keine Schokolade. Kakaobohnen sind die Samen der Kakaofrucht und wachsen bei Temperaturen von etwa 30 °C am Stamm des Kakaobaumes. Geerntet werden die Früchte mit Macheten und Sichelstäben

Als nächstes geht es für die Böhnchen zur Fermentation. Warum das notwendig ist, fragst Du Dich? So wird gewährleistet, dass sie das gewünschte Aroma erhalten. Bei diesem Prozess ändern die Bohnen ihre Farbe außerdem von weiß zu braun. Während der Gärung entsteht ordentlich Hitze zwischen den einzelnen Kakaobohnen. Die Folge: Die Bohnen werden feucht. Deswegen ...

... geht es für die Kakaobohnen nun in die Sonne, zum Trocknen. Das kann einige Wochen in Anspruch nehmen. Bevor es dann zu uns in den Onlineshop geht, müssen die Böhnchen abschließend noch geröstet werden.

Leider nicht mehr so gut wie die letzte Charge. Sowohl im Aussehen als auch Geruch und Geschmack im Vergleich sehr blass. Schade, scheint kein Criollo mehr zu sein - bestelle ich erstmal nicht wieder.
