Varieties and origins

Criollo
Criollo cocoa is considered very noble and convinces with its intense and aromatic taste. Originally from Central America, it is also known as spiced cocoa because of its strong taste.
Trinitario
The fine cocoa variety Trinitario originally comes from the island of Trinidad, off the coast of Venezuela. Its spicy, buttery taste will make you fall in love!
Forastero
Less aromatic, but very resilient and high-yielding, Forastero cocoa (whose translated name means “foreigner”) convinces with its intense chocolaty aroma.
Raw cocoa
An old superfood rediscovered, raw cocoa skips the roasting step of production, thus preserving a lot more of its healthy nutrients intact.
Roasted cocoa beans
Cocoa beans are roasted at an average temperature of 140°C, which is how they get their characteristic dark brown color. Through the roasting process, they do lose their valuable antioxidants , but they become so tasty!
Peeled cocoa beans
Once roasted and then cooled, cocoa beans are freed from their outer shell by breaking and peeling them off.
Cocoa nibs
Small, chocolaty and super tasty, cocoa nibs are small pieces and splinters of the cocoa bean, obtained from fermented raw cocoa.
Native to Central America, where it was already cultivated in the Mayan era, cocoa was for a very long time a delicacy accessible only to the upper classes. Later, from 19th century onwards, cocoa began to be cultivated intensively, so as to allow the whole world to enjoy its unique taste in many different variations. Ivory Coast is the world's leading cocoa producer, followed by Ghana, Indonesia, Nigeria, Cameroon, Brazil and other countries. More than 5 million tons of cocoa are harvested each year worldwide.
