Why are freeze-dried raspberries used?

In freeze-drying, almost all of the water in food is removed by the principle of sublimation. In this process, the fresh food is first deep-frozen and then transferred to a vacuum. The resulting vacuum sublimates the water contained in them. This means that the water changes directly from a solid to a gaseous state.
