Simple gluten-free baking without problems with consistency or taste

I have prepared sponge cake, yeast and bread dough with this flour, whereby I still mixed the teff flour 1:1 with the gluten-free flour from Schär. Both cake and bread rose beautifully and were neither dry nor crumbly! Taste-wise, I couldn't tell any difference from my non-gluten-free pastries made with spelt flour. This flour definitely makes gluten-free baking easier!
