As a food blogger on Instagram "Veganezeit", health coach on YouTube "Stefan Männlein - Ernährung ist Medizin" and father of a 2-year-old daughter, I am very concerned about eating healthily for myself and my family but still feeling like I don't have to go without.

For me, this meant giving up normal industrial sugar and all non-natural and animal-based ingredients. As I love the taste of coconut and cashew nuts, combining them sounded like a good idea to me.

I have to admit that I was extremely surprised by the result. With this taste, nobody needs normal ice cream from the supermarket anymore. So my tip to you: You have to try it ;). But now let's get started and you'll see how quick and easy it is.

For the ice cream filling, soak the cashews in water overnight or for at least an hour (you can pour away the remaining water). The coconut blossom sugar should also be finely ground in a blender to make the filling really creamy. Once the preparations are complete, you can get started: Place the cashews, coconut milk, vanilla powder and coconut blossom sugar in the blender and blend briefly to create a nice, creamy mixture. Pour the mixture into ice cream molds and place them in the freezer for about an hour. In the meantime, it is best to prepare the chocolate. It is also a good idea to grind the coconut blossom sugar. Then place the jar with the coconut oil in a pan of hot water and wait until the coconut oil is liquid. Stir the liquid coconut oil together with the cocoa powder and ground coconut blossom sugar in a small bowl with a fork until there are no more lumps. If the room temperature is below 22 degrees, place the bowl with the chocolate in warm water to keep it liquid. Then dip the frozen cream filling into the chocolate. To enjoy the Magnum nice and creamy, it should be defrosted at room temperature for approx. 3 to 5 minutes before eating.
