Varieties and origins

Ceylon
Made from the inner bark of the Cinnamomum verum tree, Ceylon is the original form of cinnamon. The thinner the rind, the finer and more aromatic the cinnamon taste, which is nobler, more aromatic and less pungent than that of the Cassia variety.
Cassia
Cassia cinnamon is the best-selling variety of cinnamon that comes from southern China. These sticks are much coarser and thicker than those of Ceylon cinnamon, darker in colour and more intense in odour, and their coumarin content is higher. Cassia cinnamon is of a lower quality than Ceylon cinnamon and is, therefore, much cheaper.
Cinnamon sticks
Cinnamon sticks are fermented and rolled up layers of cinnamon bark. They are particularly suitable for cooking recipes such as ragout, curry or sauces.
Broken cinnamon bark
Broken cinnamon consists of fragments that have come off during transport, for example, or result from the cutting of the bark. If you store the cinnamon break in a cool, dry and dark place, it keeps for up to three years.
Cinnamon powder
When ground, cinnamon has a caramel colour. The most common cinnamon powder that you find in supermarkets is the Cassia, as it is cheaper. Cinnamon powder loses its aroma rather quickly, so you should always try it before using it.
Cinnamon is a very old spice that originally came from Asia. Cinnamon trees are grown on plantations and harvested immediately after the rainy season, as the bark is then fresh and moist and can be easily peeled off. The quality of the cinnamon is based on the texture and color of its quills.
