The almond tree belongs to the family of rose plants but almonds themselves are stone fruits. Almonds have been cultivated for more than 4000 years. The trees are in blossom between February and March but the gestation period can take until the end of summer. Almonds origin in the Eastern Mediterranean. Nowadays, they are grown in America, South and West Europe - mostly in California, Spain, Italy, Portugal, Australia, and Chile.
After the harvest, the almonds are sorted by size and separated by colour. Brown almonds keep their brown skin and white almonds are blanched. During this process they lose their skin. It is said, that blanched almonds taste more intense.

Almonds are a popular ingredient in cereals, pastries and other delicious sweet and savoury dishes. They are also really tasty as a snack on their own. In the blanched form, the mild sweet taste is even more intense. Almond kernels can also be processed into almond milk.

World almond production is clearly dominated by California. But why is California so present with over 2/3 of the world's production? This is probably due to a combination of the large area under cultivation, the easy mechanical harvesting and the comparably low wages.
