The color of the grains depends on the degree of ripeness. First the pepper fruits are green, they are harvested shortly before they are fully ripe when they are green to orange in color.

Originally from India, white pepper is today grown also in Indonesia, Thailand, Cambonia, Vietnam, China, Malaysia, Madagascar and Sri Lanka.

The plant
The pepper plant is a climbing plant that can grow up to 10 metres and produces green, white and black peppercorns. The different colours of the peppercorns are due to different degrees of ripeness and not to different plant varieties.

Long ripening time
It takes about 8 to 9 months for peppercorns to be ripe, and when the time is approaching, the grains are constantly checked upon. As soon as they turn green-orange colour, the pepper is finally ripe and ready for the harvest. Our white pepper gets its colour from the fact that it is peeled in a further manufacturing step.

Harvested by hand
To obtain white pepper, the fruit of the pepper plant, called pepper berry, is harvested when it is ripe – mostly by hand, as otherwise the delicate pepper berries would be damaged.

White or black pepper?
Whether you want to use white or black pepper is a matter of personal taste. White pepper is spicier than black pepper, and the two types differ in their production process only, as both black and white pepper actually come from the same plant: the difference between the different coloured pepper varieties comes from the degree of ripeness and processing.

After the harvest, pepper is then soaked in water so that the skin and the flesh of the fruit can be easily removed, thus freeing the white seeds. This process also removes the woody aroma that we know from black pepper. The more complex production of pepper is also the reason why the white variant is slightly more expensive than the black one.
