It has been a staple of Eastern European cuisine since ancient times, and Russia is the first documented country to have cultivated buckwheat. In 2017, 3.8 million tons of buckwheat were harvested worldwide. China is the largest producer of buckwheat, followed closely by Russia.

Here we grow our buckwheat
Most of the world's buckwheat production is from Asia, but there are regions of Europe where this pseudocereal is cultivated too. Our buckwheat comes from Germany!

German buckwheat
Our buckwheat grows in Germany, and comes from certified organic agriculture. There, sowing takes place around the middle of May.

Growth and ripening
Buckwheat grows and ripen throughout September, and when it's ready for harvesting its colour changes - the little hard grains turn gold-brown.

Harvesting
This pseudocereal has very different ripening times. Therefore, the harvest takes place when about 80% of the grains are ready, in order to avoid over-ripening.

What is a pseudocereal?
Buckwheat is not, botanically speaking, a cereal, but it can be cooked and used just like one. This is great news, especially for people who suffer from celiac disease, as buckwheat is naturally gluten-free.

Obtaining groats from buckwheat grains is neither costly nor elaborate. After the harvesting, the grains are milled, thus turning into buckwheat groats. Easy!
