Question worth a million pounds: What is the difference between white and brown almond mousse? Quite simply, in the case of the white almond mousse, peeled almond kernels are processed to creamy musts. In the case of brown almond mousse - unpeeled almond kernels are used.

For our white almond mousse, only roasted almonds are used. Instead of processing them at high heat, they become blanched and then turned into the noble light almond.
