Taste like nut but it isn't- the small tiger nut is originally part of the gras family. They grow on the roots of cyprus grass and form little pea size balls, which are brown and striped in colour. That's why they are called tiger nuts.
The tiger nut is very digestible for people who are allergic to nuts but don't want to miss out on the fantastic taste of almonds. They are naturally free of allergens and gluten. With their natural sweetness and almond like taste they are very popular in Spain. They are called "Chufas" and the spanish people love to make milk out of them. You are free to do the same with out tiger nuts and decide about the amount of sugar you want to put in. As a replacement for grains and nuts they are perfect for baking cake and bread or as a binding agent for sauces and soups. You have to consider though, that tiger nuts are not to be used on a 1:1 ratio with normal flour. To create better baking properties you can mix them with buckwheat flour.
As tasty as they are, they are also full of vital minerals, fibre and other minerals. If you add them to your porridge in the morning, tiger nuts will give you the right kick and satisfy you for a long time.
