To all the home gardeners among you: you can easily grow sweet potato plants yourself, as these tubers develop shoots when stored for a long time - you may have already noticed this, when you bought a sack of sweet potatoes and postponed your plans for homemade sweet potato fries for too long!
The Chinese farmers from whom we source the sweet potatoes for our flour don't have an easy job. The rooted tubers are planted in the ground in mid-May, and from then on, the farmers have to constantly keep an eye on the temperature, because the plants are very sensitive to the cold.
Visually, the plant of Ipomoea batatas, as the sweet potato is called by botanists, is quite stunning: cup-shaped leaves entwine all over the field. These leaves are also edible and have a taste reminiscent of spinach. By the way, different colours are hidden underground, depending on the sweet potato variety: white, salmon-coloured, purple, deep red - the colour palette of the sweet potato is large and beautiful!
Harvest takes place in October
The leaves turn yellow in autumn. Their withered appearance is cause for joy, because indicates that the tubers are ready for being harvested!
Dried and ground into fine flour
In the next step, the huge sacks full of sweet potatoes are sorted according to size and quality. Then the peel is removed, so that the rich orange colour shows. For further processing into sweet potato flour, the tubers are now cut, dried, and then finely ground.
