What is jackfruit?

The jackfruit tree is a plant species in the mulberry family and is native to India. Jackfruit is considered the largest tree fruit in the world and can weigh up to 40 kg. Ripe jackfruit tastes similar to a mix of pineapple and banana. The fruity pulp is eaten as a snack in Asia. It is also dried and offered as jackfruit crisps. The special feature: jackfruit can also be eaten unripe. In Southeast Asian cuisine, the young fruits are peeled and prepared like vegetables in various cooked dishes. Since unripe jackfruit strongly resembles chicken meat in its consistency - and is a real source of protein and fibre - the low-calorie fruit has recently become a vegan meat substitute over here in Europe.

Preparing young jackfruit

However, we have found jackfruit pickled in brine to be as simple as it is ingenious: our soft jackfruit doesn't need to be cooked before use. Just put the contents of the bag into a sieve, rinse the jackfruit thoroughly and then squeeze it out. Then you can start marinating or seasoning the flesh extensively before sautéing the young jackfruit with any other ingredients. Once cooked, the consistency is reminiscent of pulled pork or chicken - however, it is a purely vegetable component that adds texture to hearty dishes.

How do I prepare the soft jackfruit?
