Potato salad is not only very filling, but also mega delicious! This recipe is inspired by the flavors of Mediterranean cuisine. Dried tomatoes and olives are used. Topped off with parsley, high quality oil and some spices, it becomes a really simple but super delicious dish. It can be prepared very well and supplemented with other ingredients. Ingredients (for 2 servings):
- 400 g potatoes, waxy
- 7-8 dried tomatoes
- 50 g black olives
- 5-6 stalks of flat-leaf parsley
- 3 tablespoons vinegar
- 7 tablespoons olive oil
- pepper and salt
Cut the potatoes into pieces with the skin and boil them. Then rinse them with cold water. In the meantime, chop the parsley and cut the dried tomatoes and olives into slices or pieces. Mix all ingredients in a bowl and season with vinegar, olive oil, salt and pepper.
