
Ingredients:
- 300 g oat flour
- 40 g coconut flour
- 1 heaped teaspoon baking powder
- 60 g coconut blossom sugar
- 1 pinch of crystal salt
- 90 g dates
- 90 g apricots
- 3 tbsp. oat flour (optional)
- Soak 40 g flax seeds with 100 ml water
- 2 eggs
- 80 g soft vegetable butter
- coconut blossom syrup optional
Preparation
Preheat the oven to 180 degrees. Soak the flax seeds in water until they have absorbed the water (they will still be a little moist). This takes about 30 minutes. Mix all dry ingredients - i.e. flours, baking powder, coconut blossom sugar, salt - together. Process the dried fruit either with 3 tablespoons of oat flour in a chopper (the flour will keep the pieces from sticking together) or chop them very small by hand (then you won't need the flour). Add the dried fruit to the flours as well and mix with them. Add the flax seeds, eggs and the softened butter to the flour mixture. Mix everything together with the dough hook of the hand mixer. Spread the dough in small cookie "patties" on a baking sheet lined with parchment paper. Sweeten the top with coconut blossom syrup, if desired. Place the tray in the oven and wait 20 - 30 minutes until the cookies are firm. Be careful, they will dry out a bit after baking, so don't bake them too crispy.
