
Muffins not only taste terrific, they also look great and are a great takeaway for parties, birthdays or just a cozy round with coffee and tea. For this recipe, we stuck to the combination of apple, cinnamon and walnut kernels. The nuts give the muffins crunchy bits, the apple brings a fresh fruity note and the cinnamon is the rounding spice. Even if you are looking for a last minute baking recipe, we can highly recommend these apple muffins.
Ingredients (for 12 apple muffins):
- 2 cups oat flour (grind rolled oats in a high-powered blender for this).
- 1 cup walnut flour (ground walnut kernels)
- 1 cup milk
- 1/4 cup coconut oil
- 1/3 cup maple syrup
- 2 tablespoons (coconut) yogurt
- 1 tsp baking powder
- 1 tbsp. cinnamon
- 2 apples, diced
- 1/4 cup walnut kernels, chopped
Preparation
Mix all the ingredients together in a large bowl. Then you can grease a muffin pan or line it with ramekins and spread the batter evenly in them. Bake at 180°C for about 20-25 minutes until the muffins are golden brown. Let the apple muffins cool down and enjoy them in a nice company!
