
Always try new things is the key to a balanced and delicious diet. So today we have a breakfast casserole for you. Normally you would put a casserole rather in the category lunch or dinner, but why actually always stick to old traditions? This great recipe is an apple curd casserole, which contains lots of protein! So it's a real fitness breakfast.
Ingredients for an apple quark casserole:
- 250 g low-fat quark
- 20 g coconut flour
- 30 g soy protein crispies
- 1 tbsp Chia seeds
- 70 g apple puree
- 100 ml milk
- 2 tsp psyllium husks
- 2 egg whites
- 2 tsp cinnamon
- 1 apple
Preparation:
First you mix all ingredients, except the apple and the egg white. Then you peel the apple, cut it into small pieces and spread it evenly over the mixture. In a baking dish you now put it into the preheated oven at 180°C and let it bake for 30 minutes.
Vegan variant:
- If you are on a vegan diet, you can simply replace the low-fat quark with soy yogurt and use vegetable drink instead of cow's milk.
- Vegan substitute for the egg white: Instead of the egg white, you can simply beat the water of a can of chickpeas until stiff (sounds unusual, but works great! The whole thing is called Aquafaba) and mix it in.
