Everything at a glance

The pine nut, also known as Pignole, is the seed of the pine tree. The tree belongs to the family of the pines, which can grow as high as 30m and can get as old as 250 years. The first pine nuts are only ready for harvest after 30 years and the ripening process of the long white seeds can take up to 3 years alone. Also the harvest of the little nuts is not as easy as you might think. First of all the tree has to get shaken, so that the pins are falling off the tree. Afterwards they need to be dried in order for them to open up, so the little seeds can get picked out. Mostly the trees are found in the Meditteranian region or ins Asia and Parkistan. 

The white seed counts as one of the most nouble seeds and is used all around the world in different dishes. The slighty sweet and almond like taste are perfect for Middle Eastern dishes or the all known italian Pesto. We love pine nuts on salads and if you roast them a bit in the pan, they are able to fully enfoled their aromatic taste.

Does the combination of pine nuts and salty dishes work?
