Production
Pekannüsse kommen ursprünglich aus den USA und erfreuen sich dort hoher Beliebtheit. Fun Fact: Im Bundesstaat Texas ist der Pekannussbaum sogar der offizielle Nationalbaum. Der Anbau von Pekannüssen ist allerdings auch außerhalb der amerikanischen Hemisphären und somit auch in Deutschland gut möglich. Das einzig Wichtige: Sonne und warmes Klima.
Pekannussbäume benötigen mindestens zehn Meter Abstand zu anderen Bäumen, da sie tiefe Wurzeln schlagen. Der Baum zählt zu der Familie der Walnussgewächse. Kein Wunder also, dass Pekannüsse auch die amerikanischen Walnüsse genannt werden.
Bis zur ersten Ernte der Pflanze müssen die Landwirte sich etwa fünf bis acht Jahre gedulden. Aber das Warten lohnt sich: Oftmals werden Pekannussbäume mehrere tausend Jahre alt und belohnen ihre Besitzer – oder besser gesagt deren Ur-Ur-Ur-Ur-Enkel – noch dann mit Früchten.
Woran man merkt, dass die Pekannüsse bereit zur Ernte sind? Die Schale öffnet sich praktisch von alleine und die Nüsse fallen zu Boden. Bei der Ernte ist Schüttel-Action angesagt: Die Pekannüsse werden nicht von Hand gepflückt. Das wäre ohnehin schwierig, da die Bäume bis zu 35 m hoch wachsen.
Nach der Ernte ist das Schälen und anschließend die Sortierung nach Qualitäten angesagt: Bruch und ganze Nüsse werden voneinander getrennt. Pekannussbruch wird oft zur Herstellung von Pekannussmus verwendet, ganze Pekannusskerne werden zu einem höheren Preis weiterverkauft. Eine exquisite Nascherei entsteht, sobald die Pekannüsse karamellisiert werden. Pssst: Im KoRo Shop findest Du allerlei Pekannuss-Variationen.
