Yacon – what is it anyway?

Those who don't know yacon yet may need some time to get used to the word. It sounds so exotic and uncommon, but at least pronouncing the word doesn't make your tongue dizzy like ashwagandha or baobab. But what exactly is yacon (intonation on the second syllable)? Yacon is a plant belonging to the Smallanthus genus. It comes from South America and has been grown over there for millennia. Yacon leaves are used for medicinal tea, but the most beloved part of the plant is the tuber. It can be eaten both raw and cooked. Due to their pleasant sweetness, the sweet potato like tuber is often processed into juice or syrup, the latter of which has become increasingly popular here in Europe. We know what you must be thinking: there are almost as many sugar alternatives as sand at the beach. The yacon helps, because its carbohydrates are naturally stored as fructooligosaccharides (FOS). You have probably heard of FOS under the name oligofructose, as a sugar replacement. They contain 30-50% of the sweetening power of sugar, yet they are extremely low in calories and are metabolized into fibre (inulin) by your body.

What does yacon syrup taste like? 

Most of all, the flavour is sweet, who would have thought? The sweetness is not as strong as refined sugar, which you should keep in mind when following recipes. We think that this is one of the positives of yacon syrup, because your desserts don't get overly sweet if you happen to drop a spoonful in by accident. The syrup's flavour could be described as caramel-like, making it great to refine desserts such as cake, cookies or energy balls. What makes our yacon syrup special?

If you have read through the product text of the yacon syrup, you have probably already noticed that our yacon syrup can shine with so many facets: It is not only fat-free (0 g/100 g) and vegan, but also gets some of its sweetness from the oligofructose it contains. As if that were not enough, only 100% yacon tuber from organic farming enters the 500 g value jar.

Can I make yacon syrup myself?

To make yacon syrup yourself, you obviously need the yacon tubers first. You are lucky that you do not live in ancient times, because the yacon plants only grew in the Andes. Nowadays they are even grown in Germany and you can grow them yourself at home. Our production process looks like this: select the tubers, wash, disinfect, peel and cut. Then we put them into the juicer, through the 1st filtration, vacuum, through the 2nd filtration, until we can finally fill them into the jars. Surely there are easier recipes on the internet, but in order for the syrup to be as nice and fine as ours, we think the steps are necessary. To come back to the initial question: Of course you can make the yacon syrup yourself, but whether it is really worth the effort is debatable. And besides, we have already done the work for you. What is all that about the fructooligosaccharides in yacon syrup?

Fructooligosaccharides, or simply oligofructose, has been used as a sugar substitute for a long time. In the body, oligofructose is eventually broken down into inulin, a valuable dietary fiber. Although oligofructose has only about 30-50% of the sweetening power of refined sugar, it has slightly fewer calories. For people with a fructose intolerance, however, the sugar is unfortunately not recommended.

Does our organic yacon syrup contain gluten?

No, our yacon syrup does not contain gluten. However, cross-contamination with gluten may occur during the bottling process, as our bottler also processes foods containing gluten. For this reason, we do not describe our yacon syrup as gluten-free.
