Soy is nowadays mostly grown in South America
Originally from China, the cultivation of soy has been exported a long time ago, and today half of the global production of soybeans comes from South American cultivations. Our tofu is, however, made from soybeans that are organically grown in the EU.

The soy plant
The soy plant is a type of plant from the butterfly family, which is subordinate to the legumes. This pretty plant can grow up to 40 cm in height, and has oval leaves.

Thrives on nitrogenous soil
The soybeans ripen in an elongated green pod. In order not to impair this ripening process, it is important that the plant grows on a soil rich in nitrogen, an important building block for the creation of soy protein.

The harvest takes place in autumn
After the soybeans have ripened, they can finally be harvested between mid September and early October. You can tell that the soybeans are ripe if they rustle in the pods when the plant is shaken!

Fun fact
The popular edamame at the sushi shop around the corner are nothing more than unripe soybeans that have been steamed and lightly salted.

After the harvest, the soybeans are first placed in soaking containers, where they swell up significantly within the next few hours, and then processed into a denatured liquid that resembles milk.

When nigari is added as a coagulant, the liquid flocculates, and high-quality soy protein is formed. From this mass, solid tofu blocks are finally obtained with the help of a so-called press box, into which olives and dried tomatos are added. Yum!
