Where does this trendy snack even come from?

There is a rumour that back in 1853, a diner complained to the restaurant staff that the fried potatoes were too thick. The cooks served up a new version, sliced razor-thin, and the guest loved them. From that day on, potato crisps were a staple on the menu. There is also an alternate version of the story, in which the said diner's sister accidentally dropped a thinly sliced piece of potato into hot grease and her husband was delighted with the result. The history of industrial crisps begins in 1920 in the United States with the invention of the potato peeling machine, the cornerstone for the mass-production of crisps.

How do sweet potatoes become crisps?

There are several possibilities for making crisps yourself: bake them in the oven, harden them in the microwave, put them in a dehydrator or air fryer or simply fry them in hot oil.
