European cultivation
In the past years, the cultivation of spelt in Europe has increased significantly due to ever-growing demand.

Spelt vs wheat
Because of its similar properties, spelt is considered a close relative of contemporary wheat. Although it is less productive than wheat, it can withstand harsher climates and thrive on nutrient-poor soil.

Ripening
A tall-growing plant, spelt can reach a height of one and a half metres. When ripe, its narrow rachis inclines significantly. The reddish shimmering grains are protected from cold, moisture and pests by its so-called husk.

Summer harvest
Depending on the altitude, spelt is harvested in the summer months, between the end of July and the end of August. It is important to thresh the ears slowly with the combine harvester, in order not to ruin the grains.

Grünkern, a popular German snack, are ordinary spelt grains, which are harvested half-ripe and artificially dried immediately afterwards.

Immediately after being harvested, the spelt grains are separated from their skin and endosperm, and then rolled, turning into the shape we are familiar with. In the last step, the spelt flakes are finally dried.
