Production
Die Paprika für unseren leckeren Aufstrich stammen von einer bulgarischen Manufaktur. Dort arbeitet sie heute mit vielen lokalen Landwirten zusammen, um in kontrolliert-biologischem Anbau Lebensmittel zu produzieren. Wir finden die Idee aller erste Sahne und beziehen deshalb unsere Paprika von dort.
Chili, Peperoni oder Gemüsepaprika – sie wachsen an Paprika-Pflanzen. Unterschiedlich sind zwar auch Größe und Form, aber vor allem die Schärfe. Grund für das schöne Brennen auf Deiner Zunge ist der Stoff Capsaicin. Je mehr Capsaicin, desto schärfer.
Unser Gerösteter Paprika-Aufstrich ist eine Hommage an die bulgarische Spezialität Ljutenica. Das ist ein Püree aus gegrillter Paprika und Tomate, die mit Salz, Pflanzenöl und Gewürzen. Dabei hat fast jeder Haushalt ein eigenes Familienrezept. Wir mussten ein paar unserer leckersten Snacks springen lassen, um an die Rezeptur zu kommen.
Geröstet, gehäutet, mit besten Bio-Gewürzen und Salz abgeschmeckt – so entsteht unser Paprikaaufstrich nach original bulgarischem Ljutenica-Rezept. Zum Schluss wird alles so lange eingekocht, bis der leckere Aufstrich endlich fertig ist. Natürlich inklusive der leckeren KoRo-Note.
Ohne Farb-, Geschmacks- und Konservierungsstoffe wird der Aufstrich in unsere KoRo-Gläser abgefüllt. Da wartet der Aufstrich dann so lange, bis er endlich von Dir gegessen werden darf. Darauf hat er sich schon gefreut, seitdem er eine kleine Paprika war.
