Organic bell peppers from Bulgaria
The small Bulgarian manufactory with which we work, had the dream of produce "real and honest food" using the variety of nature and the richness of the soil. Today, they cooperate with local farmers who believe in organic agriculture. Our organic bell peppers come from here.

Colour, size, and taste decide the variety
The bell pepper belongs to the nightshade family. All pepper varieties are herbaceous plants that can measure up to 150 centimetres and grow best in sandy and loamy soil. The paprika plant is given different names such as chilli, hot peppers or sweet peppers according to criteria such as the shape, colour and taste of its fruits.

Growing at a funny speed
The shape and colour of the paprika plant's fruits can vary strongly. While the fruits grow slowly on their stems at the beginning, they experience a growth spurt towards the middle of the ripening period, slowing down again towards the end. The fruit of the pepper is colloquially referred to as a pod, but botanically speaking it is a berry.

Green, yellow, re - when are they ready?
Depending on the type, peppers can take between 50 and 120 days to be ready for the harvesting. Normally, ripe bell peppers have a bright red coloration, but can also be orange, yellow, and even brown. Some varieties change their colour from green to yellow and red

The preparation of Ljutenica has a long tradition
Our roasted pepper spread is an homage to the Bulgarian traditional speciality called Ljutenica, a purée of grilled bell peppers and tomatoes, refined with oil, salt, and herbs. Every family has its own traditional recipe! This preparation was developed to have vegetables last throughout the winter, and every year you can still smell Ljutenica, in the villages, after harvesting season is over.

After being harvested, our organic peppers are thoroyghly washed, and prepared for the roasting process that will enhance their taste. A nice side effect of the roasting is that, afterwards, the skin of the vegetables is super easy to peel off. This makes the following steps way easier!

Roasted and peeled peppers are now sliced and prepared for being cooked in our cauldrons. The resulting purée is then refined with salt and selected organic spices. While we are true to the spirit of the traditional recipe, we have our personal take on it!

Once the wished-for texture is obtained, the spread is poured into the glasses. The small-sized manufactory makes sure to avoid any artificial flavourings, colorants, and preservatives
our spread stays fresh simply thanks to the vacuum sealed jars. Perfected with our beautiful labels, the spread jars are now ready for you to order them!
