The pine nut, also known as Pignole, is the seed of the pine tree and ripens in a pine cone. The tree belongs to the genus of pines, can live up to 250 years and reach a height of 30 meters. However, the first pine nuts can be harvested only after 20 years. The ripening process of the white elongated seeds in the pine cone can take up to 3 years. Harvesting the pine nuts is also not as easy as you think. First the giant trees are shaken to make the still closed cones fall down. The cones are then dried so that they open. Most of the pines are found in the Mediterranean, but they are also cultivated in Asia and Pakistan.  The white seed is one of the noblest kernels and it's used in many kitchens throughout the world. Due to the slightly sweet and almond-like taste, pine nuts are often used in Middle Eastern and the Mediterranean recipes. We know them especially in Italian pesto. Varieties and origins

Genaue Zahlen zur Pinienkernproduktion sind nicht bekannt. Das liegt wahrscheinlich daran, dass Pinienkerne hauptsächlich von wildwachsenden Pinien geerntet werden, da es nur vereinzelte angelegte Pinienpflanzungen gibt. Daher siehst Du auf unsere Weltkarte eine Schätzung. Die Pinien tragen erst nach ungefähr 20 Jahren Zapfen, die zwischen Oktober und April geerntet werden können. Die Ernte der Pinien ist auch gar nicht so leicht: die Zapfen der bis zu 30 Meter hohen Bäume werden in gefährlicher Handarbeit vom Baum geschlagen. Durch die aufwendige Ernte ergibt sich ein hoher Preis.

Cedar nuts

Compared to already purchased pine nuts, the "pine nuts" from Koro are shorter, rounder and more tart in taste. I suspect therefore here it is cedar and not pine nuts (albeit at an unbeatable price).
