Mung dal – what is that?

The term mung dal, or moong dal, can be somewhat misleading. It refers to both peeled mung beans and a popular Ayurvedic dish. You have probably heard of lentil dal or even tried it. For the mung dal dish, simply replace the red lentils by peeled mung beans. The advantage over unpeeled beans is that you don't have to soak the legumes overnight. This makes spontaneous mung dal adventures possible! All you need to do is rinse the mung beans well, then you can simply cook them and enjoy. Mung beans are rich in protein and fibre and are great for a vegan or vegetarian diet. Other names for the legume that you may have come across are mung bean or yellow lentils - many different names, one great product!

Tasty recipes with mung dal

As already mentioned, peeled mung beans do not need to be soaked, but can be used directly. They make a great addition to a delicious salad or a replacement for the lentils in our ginger and lentil soup. Our personal favourite: mung dal curry. With their slightly nutty flavour, they add a very special touch to any dish as a side dish. Above all, we were convinced by their use as a vegan substitute for eggs. For example, you can easily "veganise" banana and pumpkin muffins.  Or try a vegan scrambled egg for the next Sunday brunch and replace the eggs or the tofu (for the more experienced vegan cooks among us) with mung beans soaked in plant milk. Together with the right spices, the mung beans taste amazingly close to the original and really enhance your breakfast.
