Back in the 6th century the Chinese discovered the unbelievable potential of a light green powder named Matcha, which was used as a medical plant. Later on when buddhist Monks were traveling to Japan, they brought back the seeds of the tea plant. Thats how the nearly forgotten matcha plant was gladly rediscovered. Even today, matcha is best know as a vitalising stimulant and is especially popular among Monks for better concentration while long periods of meditation.
The matcha powder is won from the tea plant. The cultivation is very similar to other tea plants, except that the matcha plant is shadowed throughout it's growth. Why? The shadowing brings along a higher production of Chlorophyll and Protein production. The plant therefore gets most of its Minerals out of the soil. That's how you get the unique taste and green colour. After the harvest, the tea leaves are getting dried and grounded in a traditional stone mill.
Because Matcha is not a proprietary word and the translation would me "milled tea", there are many different qualities of Matcha. In general you differ between Ceremony, Premium and Cooking quality.

Does Matcha contain teein or caffein?
Seeing it from a chemical kind of view both are actually the same - and yes Matcha contains caffein. Caffein is linked to flavonoids, which means that teein is released in the gut. In comparison the caffein which you find in coffee goes directly in the blood stream.
How do I prepare a cup of Matcha?
Stir 1 gramm of Matcha powder with a splash of cold water until it's a thin paste. You'll get best results if you have a Matcha Bamboo Broom. Afterwards you can add water which is 80°C hot and stir until there is a bit of foam on top of the Matcha.
How long is Matcha durable?
After opening the Matcha you can keep it in your fridge for about a month without it loosing its aroma

Da ich immer wieder auf der Suche nach gutem Matchapulver bin, ich mit Koro immer gute Erfahrungen gemacht habe, hab ich diesmal mein Pulver hier bestellt. Vom Geschmack her ist es gut. Jedoch klumpt es total, sodass man während des Trinkens die ganze Zeit kleine Klümpchen im Mund hat. Da ich meinen Matcha nicht jedes Mal vor Gebrauch sieben möchte, werde ich dieses leider nicht mehr hier bestellen.

vielen Dank für die Rückmeldung. Wenn man den Matcha nicht sieben möchte eignet es sich auch super das Pulver zusammen mit etwas Wasser mithilfe eines Matcha Bambusbesen zu verrühren. So klumt das Pulver nicht und man den selbstgerührten Matcha genießen.
