Cultivated in Mediterranean lands
It is estimated that around nine million hectares are worldwide used for olive trees, giving an annual harvest of around 17 million tons. The largest part of olive plantations is located in the Mediterranean area - Greece, Italy, Spain and Turkey in the lead.

The olive tree
The naturally evergreen olive tree loves warmth and can withstand longer periods of drought. These Mediterranean trees grow very slowly, and it is not uncommon for them to reach venerable ages.

Blossoming
The olive tree blooms between the end of April and the beginning of July, and its inflorescences can hold up to 40 flowers. Solitary stone fruits – the olives – develop from them in the summer months. How fast the ripening process goes, depends on the hours of sunshine, the temperature, and also the variety.

Harvest takes place in the cooler months
The first olives can be harvested from November, and they are usually characterized by their intense taste and firmness. If you wait until December or January with the harvest, the yellow-greenish colour changes to a reddish-purple hue, the olives' flesh becomes softer and their aroma gradually becomes milder.
