Brown vs. golden flax seeds

Now you are probably wondering about the difference between the two flax seeds, right? More often available in stores and supermarkets, brown flaxseeds are a more common ingredient; golden flax seeds are a separate breed. The most obvious difference is the colour. But the taste is not quite the same either. Brown flax seed flour is more intense and nutty in taste compared to our golden flax seed flour. However, what both varieties have in common - is their high swelling capacity! Both flax flours can draw a lot of water and swell properly. Therefore, you should make sure to add sufficient liquid during preparation. It is best to let your dough stand for a minute longer and wait to see if more water is needed.

Can i replace normal flour with flaxseed flour 1:1?

Not quite, as you have to be aware that flaxseed flour absorbs a lot of water! You can therefore either use more liquid, or simply reduce the amount of flour.

Is KoRo's lineseed flour gluten-free?

Our organic flaxseed flour does not contain any gluten-containing ingredients and is naturally gluten-free. Cool, right?

Can I use it as an egg replacement?

Yes - and how well! Simply mix one tablespoon of flaxseed flour with three of hot water; let this rest for a moment and voilà! - you have created a flaxseed egg.

How high-fibre is this flaxseed flour?

Our flaxseed flour has an average of 36 grams of dietary fibre per 100 grams - a real fibre bomb! An important part of a balanced diet, fibre is crucial for your gut health, but be careful: you shouldn't overdo it, especially if your stomach is not yet used to a high-fibre diet. Ideal for baking bread

I mainly bake our bread myself and like to use flaxseed for this, among other things, so the flaxseed flour was just right for me to test.

In the bread dough I have reduced here the proportion of wheat flour somewhat and filled this with flaxseed flour. In conjunction with flaxseed and other grains as a swelling or broth piece fits very well and the bread gets a slightly nutty flavor.

But of course you can also use flaxseed flour for other baked goods or as a binder for sauces. In any case, it is very healthy and should not be missing in any kitchen, especially since you really do not need much of the flour.
