The Cassia tree
The tree from which the cinnamon bark originates, is called Chinese cassia or Chinese cinnamon and can grow up to 12 meters. The bark as well as the trees’ leaves have an extremely strong scent.

The trees from which our Cassia cinnamon comes, grow in Indonesia. However, Cassia cinnamon trees are originally from China - where also their other name, Chinese cinnamon, comes from.

From tree to spice
The process of transforming the cinnamon bark into a cinnamon stick is done by hand: the tree bark is separated from the tree and then freed from its outer layers. When it dries, the cinnamon bark then rolls up by itself.

Once the cinnamon sticks have dried, they only need to be powdered. To do this, the dried stalks of the thick bark of the Cassia tree are thoroughly ground to create a fine powder, which is packaged without further processing or additives, and then goes straight to your home!

Cassia vs. Ceylon
While with cinnamon powder you can't immediately tell whether you are looking at Cassia or Ceylon, cinnamon sticks leave no room for doubt. Cassia cinnamon consists of the thick rolled bark of the cassia tree, also called spice bark, and are darker in colour than Ceylon ones, which, on the other hand, are thin, rolled up pieces of the cinnamon tree inner bark. However, once the cinnamon is powdered, it is impossible to tell the difference between the two!
