The whole pepper grains come from the pepper plant, mostly cultivated in India, Malaysia, Vietnam and Brazil. The fruits of the plant are growing in little ears, with each of those ones that can hold up to 150 seeds. The colour of the seeds vary very much according to their level of ripeness: unripe, the pepper fruit looks quite green and when they are just about to turn orange, they are harvested and dried, which gives them their brown colour and wrinkly structure. Varieties and origins
Originally, pepper comes from the South Indian Malabar Coast in India, and, about 1000 years ago, pepper cultivation arrived to Indonesia and Malaysia, spreading further from there. Today, Vietnam is the main exporter of pepper due to strong regulations. In 2017, a total of about 690 tons of pepper (piper nigrum) were produced worldwide.
