Argan Oil is extremely popular at the moment. It comes from a shrubby tree called Argania spinosa that grows in Morocco. Traditionally, the fruit of the tree are gathered in two main ways. They are either allowed to fall on the ground and then picked up, or goats are allowed to climb the trees and the flesh of the fruit, then the nuts would pass right through the goats and become available for collection. Nowadays the fruit of tree are often beaten off of it.
Once the fruit are gathered, they are dried out in the sun. Afterwards, the flesh of the nuts is removed to discover the brown and round nut inside. The shell of the nut is extremely hard and is cracked between two stones. That is done by hands. This is being done to get to the kernels of the nuts, as each argan nut contains 3 almond-shaped kernels. Usually the kernels are toasted, then ground with some water to make a paste. Afterwards, the paste is being kneaded until the oil starts to separate from it.
The oil ranges from an almost colorless pale yellow to somewhat darker color. It is not as thick as olive oil, and tastes like a blend between hazelnut, sesame and pumpkins seed oils.
In addition to its valuable unsaturated fatty acids and vitamins, argan oil also contains plant substances such as phytosterols and ferulic acid.
