For jam, the fruit content is 35%, for extra jam it is at least 45%. Some varieties, such as redcurrant, quince and rosehip, are an exception with 35 % minimum fruit content for Extra Jam and 25 % for Jam. Only spreads that have been industrially produced from citrus fruits with at least 20 % fruit content may be called jam. Exception: If you want to make jam privately, you may call preserved fruit jam. Then there is jelly. This is made from fruit juices and has no fruit pieces. Fruit spreads, on the other hand, do not fall under the so-called "jam ordinance" because neither the sugar nor the fruit content used are defined by law.
