Traditional fermented tea

Kombucha is by no means just a trendy drink of the 20th century, but is reported to have been around since 206 BC. Especially in East Asian, Kombucha, a fermented drink formerly also known as Cha tea, was considered an auspicious drink and home remedy. Kombucha cultures, which are found in our Kombucha tea mushroom, are used for fermentation. This tea mushroom is not like our well-known champignons & Co., but a mixture of different yeasts and acetic acid bacteria; these cultures ensure that the sweetened tea breaks down sugar through fermentation and then forms carbonic acid, glucuronic acid, and small amounts of alcohol.

Make kombucha yourself

With a fine sweet-and-sour taste and a pleasant fermented note, kombucha is truly unique! But sometimes it's not that easy to find real, traditional, and fresh kombucha. If you are tired of having to check all the supermarkets in your neighbourhood just to find your beloved drink, we have a suggestion: what about simply fermenting your kombucha yourself? It might sound difficult at first, but it isn't at all. All you need is our organic kombucha tea mushroom and a little patience. Homemade always tastes a little better, and kombucha is no exception!

Easier than ever: kombucha mushroom with starting liquid

If you've always wanted to make kombucha yourself, then our Scoby is the perfect basis for your next do-it-yourself experiment. Thanks to our tea mushroom you can avoid expensive kombucha sets and start your own culture yourself. In addition to the organic kombucha mushroom, you only need a little green or black tea, a little sugar, and a glass – all part of our set. To prepare your delicious kombucha, all you have to do is place the tea mushroom in the cool starter liquid and cover it with a clean cloth, then place it in a warm and quiet place. And now? Well, now it's time to wait, as it usually takes around seven to ten days for your kombucha to ferment. If you let the mushroom ferment longer, the kombucha will be more acidic. Easy right?

What can you do with kombucha - apart from drinking it? 

If you are not convinced by its fresh taste and simple preparation, then kombucha has another ace up its sleeve: like all fermented foods, kombucha contains numerous microorganisms and valuable bacterial cultures which are good for your gut health! To not waste them and their benefits, and not spoil the typical taste of this healthy and tasty drink, you should always enjoy your fermented tea cold.

As a tangy cold drink, kombucha has long ceased to be an insider tip. What is a kombucha Scoby and what can I use it for?

The kombucha mushroom is actually no mushroom at all, but a mixture of different yeasts and acetic acid bacteria called Scoby, which is the acronym of symbiotic culture of bacteria and yeasts. With the help of these kombucha cultures, you can now easily prepare your own kombucha at home. The starting liquid made from tea and cane sugar will help you.

Is kombucha healthy?

Healthy is, above all, a balanced and varied diet combined with an active lifestyle. Kombucha can be a great addition to a healthy diet as it can substitute sugary tea drinks, and has many nutritional benefits.

So, how do I make kombucha?

Thanks to our kombucha starter set you can now easily make your own tasty drink at home! In order to do that, you only need our kombucha tea mushroom with the starter liquid, which contains black tea, water, a little cane sugar, and the kombucha starter cultures. Simply place the mushroom in the tea liquid, cover it with a clean cloth, and let it ferment in a warm place for about 7-10 days, after which you can taste it and see if it needs to ferment a bit longer. Enjoy your homemade kombucha!

How many calories does kombucha have?

Kombucha is a low-calorie drink. Our kombucha mushroom weighs around 150 grams and can produce about one litre of delicious kombucha, with the starter liquid. The finished kombucha tea contains only 17 kcal per 100 ml and is therefore significantly lower in calories than other commercial soft drinks. But that's not all: if you don't add any sugar to your kombucha, at the end, the tea will contain only 4.2 grams of it and is therefore significantly lower in sugar than some kombucha variants from the supermarket - a purely natural product!

Can my homemade kombucha get mouldy?

Kombucha beginners are often concerned about possible mould growth. But really, you should not worry, as the threads and streaks in your fermenting kombucha are normal and harmless yeast formations that belong to the Scoby! Only if the colour or smell change significantly or your kombucha mushroom starts to turn blue or green, you should avoid any health risks and stop using your culture. But as long as you take care of letting the kombucha breathe, and it smells sour like vinegar, you don't need to worry at all.

How long does this Scoby with starter liquid keep?

Our organic kombucha Scoby keeps for up to two years, and can easily be stored away until you have the time and desire for your next do-it-yourself action. Take care of storing the tea mushroom at a temperature of over 10 degrees, and in a dark place. You must not freeze nor refrigerate the Scoby - and you don't even need to, because of its long shelf life.

Is the kombucha tea mushroom edible?

Caution: kombucha mushrooms are not suitable for eating! Moreover, since the Scoby is a yeast mushroom, you would not like its taste at all.

Is kombucha good for the digestive tract?

Yes! Fermented kombucha contains microorganisms in the form of yeast and bacterial cultures that are also found in the human intestinal flora, and are good for the health of your gut. However, you should be careful not to consume too much of your homemade kombucha to avoid side effects such as gas and stomach pain.

Will the homemade kombucha contain alcohol?

To make kombucha yourself, you have to ferment sweetened green or black tea with the help of our kombucha mushroom Scoby. Fermentation is an alcoholic agitation during which small amounts of sugar are broken down into carbon dioxide and ethanol. Since alcohol, as with fruit juices, is only a by-product of fermentation, its content in your finished kombucha tea is between 0.1% and a maximum of 2%.

Is kombucha suitable for pregnant women?

Kombucha and other fermented drinks are not 100% alcohol-free. Due to the low, but still present, alcohol content, and to the fermenting yeasts, we recommend that you do not drink homemade kombucha during pregnancy or while breastfeeding.

How much kombucha can I make with this Scoby?

Our organic tea mushroom is all you need to prepare kombucha yourself. With our mushroom and kombucha mixture, you can ferment one litre of kombucha yourself. However, you need a little patience, as you will have to wait for about 7 to 10 days before you can hold the finished drink in your hands. As the kombucha mushroom will grow, eating up the sugar, it will form small offshoots in the shape of additional layers, which you can easily separate and use for your next homemade kombucha. To reuse your Scoby for more kombucha, simply leave it in some liquid, and add new cold sugared tea. Magical, right? If the Scoby gets noticeably darker, you should dispose of it and use one of its babies.
