Sour cherries
Sour cherries, also known as tart cherries, are dark-red and, compared to sweet cherries, more acidic, smaller, and juicier. The different varieties of sour cherries all have in common a mildly sour, tart taste. They are perfect in baked goods and canned. KoRo's sour cherries are dried and sugar-free.
Sweet cherries
As you can deduce from their name, sweet cherries are much sweeter than sour cherries, as they less acidic. Characterised by a dark-red tint and soft flesh, sweet cherries are delicious also dried - so much that we have decided to avoid using any added sugar to them!
Cherry juice
Cherry juice comes, normally, from sour cherries, but can be made of sweet cherries as well. The cherries are washed, their stones removed, and then juiced.
Freeze-dried cherries
Freeze-dried cherries are shock-frozen directly after the harvest, and then dried. Thanks to this elaborate process, the fruits maintain their colour, taste, and most of their nutrients intact. They are a great topping for your porridge, or eaten as a healthy snack.
Worldwide, there are over 400 different types of cherry, which can be divided into sweet and sour cherries. In addition, the varieties can also be differentiated based on their maturity - early, medium and late ripening varieties. Turkey and the USA are among the world's largest producers.

Freeze-dried sour cherries - a look behind the scenes

Ripe fruits
Our sour cherries come from Poland, where they grow on trees that can reach a height of 10 metres. As soon as the fruits have ripened completely during the summer months, the sour cherries are harvested and passed on for freeze-drying.

Delicate freeze-drying
Compared to conventional drying, freeze-drying is a very gentle process which leaves most of the vitamins and nutrients intact, and intensifies the sweet and sour taste of the cherries! To do this, the fruits are first frozen and then exposed to a negative pressure of six millibars, due to which the water vaporizes. It might not sound like a gentle process, but it is!

Ready to be packed!
As soon as the sweet and sour cherries are shrunk into small, freeze-dried fruits, they are sent to the packaging station. Nicely packed and sealed, these delicious cherries are shipped to our warehouse where they wait for you to buy them!

I had already requested a bulk order from KoRo.... Without the freeze-dried sour cherries, because they were unfortunately not in stock at the time. Shortly thereafter came the longed-for mail. The cherries were available again. I couldn't help myself and ordered again shortly after. Only because of the cherries. I knew something similar in mini portions and covered dark Schoki. But unfortunately with way too much sugar. Now I snacke the cherries with 85 percent dark Schoki..what can I say it was worth it. I am thrilled. Would order again.
