High Fiber Oatmeal Cookies

These oatmeal cookies are perfect as a gluten-free and high-fiber breakfast. Since they are incredibly good to eat on the go or in the office, we are absolutely thrilled by them. The combination of oats and dried fruits gives the body lots of fibre and makes you feel lighter.



  • 300 g of oatmeal
  • 40 g of peanut flour
  • 1 heaped tsp baking powder
  • 60 g of coconut blossom sugar
  • 1 pinch of salt
  • 90 g of dates
  • 90 g apricots
  • 3 tbsp oatmeal (optional)
  • soak 40 g of flaxseed with 100 ml water
  • 2 eggs
  • 80 g of soft plant butter
  • Coconut blossom syrup 


Preheat the oven to 180 degrees. Soak the flax seeds in water for 30min until they have absorbed the water but are still slightly damp. Mix all dry ingredients - flours, baking powder, coconut blossom sugar, salt - with each other. Process the dried fruit either with 3 tablespoons of oatmeal in a blender or cut them in very small by hand. Add the dried fruit to the flours and mix them all together. Add flaxseed, eggs and the soft butter to the flour mixture. Mix everything with the dough hook of the hand mixer. Spread the dough in a small cookie "patties" on a baking sheet lined with baking paper. Sweeten the surface with coconut blossom syrup as desired. Put the tin in the oven and wait 20 - 30 minutes until the cookies are firm. Attention, they dry after baking a little, so do not bake them too crispy.
