Cookie dough is the new trend food par excellence! More and more cafés are offering the sweet snack. Our recipe is based on cooked chickpeas and oatmeal. Although one could suspect that it is an unhealthy cheat, it is absolutely not! Only wholesome ingredients are used and they are still delicious! Have fun recreating them!
Ingredients (for 5-6 servings):
- 250 g chickpeas, cooked
- 1/2 cup oat flakes
- 1 tbsp (vegan) protein powder
- 2 tbsp almond paste
- 2 tbs maple syrup
- 1/2 tsp vanilla extract
- 1/4 cup (almond) milk
- 1 handful of chocolate drops
- 1/2 cup chopped walnut kernels
- pinch of salt
Start by processing all ingredients (except chocolate drops and walnuts) into a creamy dough using a blender. You can then add in the chocolate drops and walnuts. Let the cookie dough cool in the fridge for a while. Serve the cookie dough in bowls and enjoy!
