Apple Cinnamon Granola

No purchased granola can replace a self made granola! There is nothing better than the smell of freshly made granola in the house. This granola is not only perfect for the cold season, but it does not contain sugar or oil. The oil in this recipe is replaced by aquafaba (chickpea water). Sounds funny at first, but you'll see the granola is super crunchy and yummy.




Preheat the oven to 160 degrees top and bottom heat. Mix the oats with the chia seeds, nuts, coconut sugar, salt and cinnamon in a large bowl. Beat the chickpea water stiff with a hand mixer (takes 5-10 minutes) until a firm "egg snow" is formed. Now add the maple syrup and vanilla to the "egg snow" and stir in again briefly (do not stir too much!) Add the "egg snow" over the oatmeal mixture and mix well. Bakefor 25-30 minutes in the oven until it is golden brown. Halfway through the time, mix the granola. Especially in the end, you have to be careful that it does not burn. Allow to cool and fill into glasses. Now you can cut the apple rings into small pieces and mix with the mulberries under the granola.

Tip: The granola gets crispy when it cools down. Do not wait for it to get crispy in the oven otherwise it will burn!
