
The pasta salad brings a lot of Asian flair in your kitchen. The accompanying dressing tastes particularly fine, giving the soba noodles a delicious peanut note. By the way, if you do not like cilantro, fresh parsley is also perfect!
Ingredients for 1 person
For the pasta salad :
- 80 g Soba noodles
- 100 g Tofu
- 1 Carrot
- ¼ red cabbage
- 1 welsh onion
- ½ Bell pepper
For the dressing:
- 1½ Tablespoon Peanut Mousse
- 1 Tablespoon lime juice
- 1 Teaspoon rice vinegar
- 1 Teaspoon Tamari
- ½ Teaspoon Miso Paste
- 1 Teaspoon maple syrup
- 1 Teaspoon sesame oil
- ½ Teaspoon garlic powder
- ½ Teaspoon ginger powder
- 2 Tablespoon water
For the side:
- 1 handful coriander
- 1 handful plain peanuts
- 1 Tablespoon Sesame
Preparation
- Dice the tofu and bake in the oven at 200 degrees for about 15 minutes until crispy, turning in between.
- Cook the noodles according to the package instructions. Cut the vegetables into thin slices.
- Mix the ingredients for the dressing.
- Mix the cooked pasta with the dressing, the vegetables and the baked tofu.
- Sprinkle with the coriander, peanuts and sesame seeds.
- Eat the salad either directly or let it cool and enjoy.
