Here we introduce you to the most tropical snack ever! We already know energy balls, but the combination of our awesome jackfruit and tropical coconut takes it to a whole new level! Bring that holiday feeling right into fall with this recipe idea. The energy balls are quick to prepare and store nicely in the fridge or freezer. So you're all set with some tasty snacks for a while. Have fun with the recipe!
Ingredients (for 12-15 energy balls):
- 100 g jackfruit, dried
- 50 ml (oat) milk
- 70 g chopped almonds
- 50 g almond flour
- 1 tsp vanilla pods
- coconut flakes
To start, put the dried jackfruit in a blender with the milk and puree thoroughly (small pieces are okay). Add the chopped almonds, the almond flour and the vanilla extract. Mix all the ingredients until you have a sticky mixture. If the dough sticks too much to your hands, you can simply add some almond flour. Shape the mixture into energy balls of any size and then roll them in shredded coconut. Your Blissballs are best stored in the freezer or refrigerator.
