- flax seed egg (flax seeds and water): 1 tbsp
- water: 3 tbsp
- oats / oat-based flour: 250 g
- cashew seeds: 150 g
- baking powder: 3 tbsp
- salt: 1 pinch(es)
- cinnamon: 1 pinch(es)
- plant-based milk: 150 ml
- maple syrup: 75 ml
- coconut oil: 1 tbsp
- nuts: 1 handfull(s)
- bananas: 1 piece(s)
Pre-heat your oven to 180°C. Let the flax seeds soak in some water and put them aside.
Blend the oats and the cashew seeds. Sift together all of the dry ingredients.
Add the bananas and all of the other wet ingredients into the blender and puree them.
Stir togther the dry and the wet mass into a unifrom batter and fold the flax seed egg under.
Pour the batter into a rectangular and greased pan, garnish with some nuts and a further banana and bake for about 45 minutes.
Serve with some marmelade or nut butter if you'd like.
