
Ingredients
- couscous: 100 g
- chicken breast: 100 g
- red bell pepper: 1 piece(s)
- chickpeas: 100 g
- sweet potatoes: 100 g
- mushrooms: 250 g
- coconut milk: 100 ml
- currypaste: 1 tsp
Preparation
Step 1
Prepare the couscous as instructed on its package.
Step 2
Peel and dice the sweet potatoes.
Step 3
Rinse the paprika and the mushrooms and cut them into pieces.
Step 4
Briefly rinse the chickpeas.
Step 5
Roast the chicken breast with some oil (if you like you can add the onions beforehand).
Step 6
Add the sweet potatoes as these require the longest to cook.
Step 7
As soon as the potatoes are cooked stir in the remaining ingredients and the couscous.
Step 8
Afterwards pour the coconut milk on top and season with curry paste, salt and pepper.
