Unfortunately, the Christmas season is already over again. Nevertheless, cookies still taste great in January and may awaken one or the other beautiful moment of Christmas Eve or the holidays with the family. We present you here a recipe for cinnamon stars, which also fits super in the winter! The cookies are prepared in a few minutes and are a sweet temptation in the afternoon.
Ingredients (for 18-20 cinnamon stars):
For the dough:
- 150 g ground hazelnut kernels
- 100 g ground almonds
- 1 tablespoon ground linseed
- 110 g icing sugar
- 1 tablespoon cinnamon
- 1 tablespoon lemon juice
- optional: 2 tbsp. coconut flour and rum flavouring
For the glaze:
- 100 g icing sugar
- 1 tsp lemon juice
- 1 tbsp. water
- Coconut oil, baking paper, cinnamon cookie cutter.
At the beginning you should mix all ingredients for the dough, except the water, thoroughly in a mixer. Gradually add (3-6 tablespoons) water until you have a sticky mixture. Form the dough into a ball and let it rest in the freezer for 30 minutes. Use a brush to spread coconut flour on the work surface so that the dough does not stick so much later. Roll out the dough for the cinnamon stars evenly and cut out stars. Place the cut out stars on a baking tray lined with baking paper and bake in the oven for about 6 minutes at 200°C top/bottom heat. Finally, mix the ingredients for the glaze. You can brush the finished cinnamon stars with it.
