Ingredients
- spelt flour: 150 g
- peanut flour: 50 g
- cinnamon: 1 tsp
- ripe bananas: 3 piece(s)
- frozen strawberries: 1 cup(s)
- erythritol: 70 g
- baking soda: 2 tsp
- cider vinegar: 2 tsp
- oil: 30 ml
- chia seeds as egg substitute: 2 tsp
- soy yoghurt: 50 g
Preparation
Step 1
First sift together flour, sugar and cinnamon in a bowl. Let the chia seeds (egg substitute) soak in 50ml of hot water and then stir them into the flour mixture.
Step 2
Now add baking soda to the flour mixture and drizzle the apple vinegar on top until it begins to foam slightly. Mash the bananas with a fork. The bananas should be quite ripe. You can tell whether they are ripe enough judging by the many small brown spots that will appear on its peel.
Step 3
Now add all of the wet ingredients and stir them together for 1-2 minutes until they produce a sticky batter.
Step 4
Pour the batter into a greased baking pan and garnish with bananas and strawberries.
Step 5
Pre-heat your oven to 160 degrees Celsius and bake for 40-50 minutes.
