These meatballs are perfect as finger food for an appetizer, or to bring on a picnic! A little tip to make it even better: you can make hummus to accompany the meatballs.
You can also prepare them with vegetables, rice, potatoes ...
For about 14 meatballs :
- 60 g coral lentils
- 60 gbulgur
- 3 cloves
- 1 handful of parsley
- 1 tablespoon tomato purée
- 1 tsp garam masala (or cumin)
- 400 ml vegetable stock
- juice of 1/4 lemon
First, rinse the lentils and bring them to a boil in the vegetable broth. Let them cook for 5 minutes. Then add the bulgur. Lower the heat, cover the pan and simmer for about 15-20 minutes. Then remove from heat and let the mixture cool for 5 minutes. First, mix in the cives and parsley, then add the lentils and bulgur. Add the tomato puree, garam masala and lemon juice and let cool. From this preparation, you can start to shape the meatballs. Place the dumplings on a baking sheet, or on parchment paper and bury for about 15 minutes.
