What are the advantages of freeze-drying?

Freeze-drying is a particularly gentle preservation process. The food is frozen directly after harvesting and then placed in a vacuum container. Varieties & origins

Dried strawberries

Once dried, strawberries taste even more intense and fruity. Add them to your yoghurt, porridge, or even salad, for a delicate sweetness.

In 2018, over 8 million tons of strawberries were harvested worldwide. 82 percent of the total production comes from the first ten growers. China has the first place with around 3 million strawberries harvested, followed closely by the USA. As strawberries must have a minimum size of 18 mm for resale, thousands of tons, especially in Germany, rot unharvested in the fields every year.

Back to the 90s

Weil alle Vintage lieben: Ein kleiner Sprung in die Neunziger. Die Idee Früchte mit Schokolade zu überziehen gab es nämlich damals schon. Auch die Maschine sah fast genauso aus, mit einem kleinen aber entscheidenden Unterschied: Die Lenkrad-ähnlichen Griffe neben der Beschichtungsschale lassen vermuten, dass hier per Hand rotiert wurde! Da musste man garantiert nicht extra ins Fitnessstudio, um die Schoko-Kilos wieder wett zu machen!

Gleichmäßig rotieren und sorgfältig dosieren

Heute können wir ganz entspannt daneben stehen und zuschauen wie Erdbeeren und Schokolade zu einem Wunder verschmelzen. Warum müssen die Erdbeeren überhaupt rotiert werden? Damit jede Stelle gleich viel Schoki abbekommt! Die Schokoladendosierung muss außerdem mit kalter Luft ausgeglichen werden. Wenn zu viel Schokolade hinzugefügt würde, härtet die Schokolade nicht schnell genug aus - das wären dann Cluster statt Kugeln.

Add a little glitter

Wir wollen natürlich nicht nur eine runde Form sondern auch einen glänzenden Look. Deshalb legen unsere halbfertigen Schokoerdbeeren einen Stop in einer weiteren Beschichtungspfanne ein. Wieder wird rotiert, aber diesmal regnet es statt Schokolade ein flüssiges Glasiermittel.
