- oats: 50 g
- vegan protein powder (or more oats): 15 g
- baking powder: 1 tsp
- chia seeds: 1 tsp
- banana: 0.5 piece(s)
- oat drink: 120 ml
- Ceylon cinnamon: 1 tsp
- coconut yoghurt: 40 g
- vanilla pudding powder: 1 tsp
- coconut blossom sugar: 1 tsp
- cinnamon: 0.5 tsp
Pre-heat your oven to 180 degrees Celsius.
Blend together the first seven ingredients needed for the baked oats until they form a batter like texture.
For the filling stir together coconut yoghurt, vanilla pudding and a bit of cinnamon in a small bowl.
For the topping stir together cinnamon and coconut blossom sugar.
Put about two thirds of your oat mixture into an oven safe dish and cover it up with a thin layer of the cinnamon and sugar mixture.
Place the filling into the middle and cover it up with the remaining oat mixture.
At the end put the remaining cinnamon and sugar mixture on top and bake everything for about 15 - 20 minutes.
Finally you can still add a swirl with the coconut yoghurt if you'd like.
