
Ingredients
- Rice flakes: 80 g
- coconut water: 250 ml
- Coconut yoghurt: 100 g
- coconut flakes: 10 g
- Sweetener of choice e.g. erythritol, coconut blossom sugar, date syrup:
- Optional vegan protein powder: 20 g
- Mango (fresh or frozen): 100 g
- Salt:
- Topping: coconut flakes:
Preparation
Step 1
Boil rice flakes with a pinch of salt, sweetener and coconut drink (microwave or stove) and simmer for approx. 5 min. until swollen.
Step 2
Stir in coconut yogurt, shredded coconut and protein powder if using.
Step 3
Finely dice the mango and add to the finished rice pudding.
Step 4
Top with coconut flakes and enjoy
